Cooking brisket is both science and art. It’s singularly the hardest cut of meat to cook consistently. In this class, we will discuss both the challenges posed by the science of brisket and the art of cooking it. Evans will teach you that with any smoker (and some are much better than others), you can learn the two essential methods he has categorized: “Fast then Slow” and “Slow and Moist.” Both will propel you further into the never-ending quest for the perfect brisket. Beans and collards will also be served.
